Easy Cheese Cookies
Pat recently found this recipe while looking for some cheesy snacks. What appealed to her was the minimum of fuss needed to make these cookies. (Unfortunately, this recipe has already disappeared into the ether, so enjoy my variation below.)
Ingredients
- 150g self raising flour
- 1 tsp baking powder
- 125g margarine
- 75g grated cheddar cheese
- ½ tsp salt
- 100ml of finely chopped biltong or 25ml ground biltong (biltong is optional - do not add salt if you use biltong)
Method
Crumble the grated cheese with your fingers in a mixing bowl.
Add flour, baking powder, marg and salt (or biltong) to the cheese and work into a dough with your fingers.
Place balls of about 2cm diameter onto a lightly greased baking tray.

Placing the cookies on the baking tray
Flatten the balls slightly.
Bake at 200°C for 15 minutes.

Ready to eat!
